I think like you. I made my own approach by decreasing 'Save completed' to just a dot. And I decreased shields and LightGem very much. But the LightGem is sometimes necessary because of the DarkEngines baked shadows there are somtimes spots that brighten you up although you should be in the shadows. Or the other way around.
You would love The Dark Mod, there it´s very easy to play without interface by just toggling the hud on and off for the items. Also you can activate a PlayerShadow that helps the judging for shadows. Because of the realtime shadows in there you don´t need a lightgem anymore...

I've always liked the loot pickup sound in Thief 1 & 2. It became an audio icon that I always looked forward to while looting. When Deadly Shadows changed it to something resembling the sound that Tinkerbell might make while taking a crap, I was upset. It was another thing that Ion Storm attempted to "fix" that wasn't broken.
