I've suddenly had the urge to play Morrowind again. On previous attempts, I could never get a good character rolling, but I think I can do better this time.
I've got one major question:
1. A while back, I got a great Morrowind mod that was purely a cosmetic upgrade with new face and hair models for each race. It was linked from these forums, I loved it, and I don't know where it is anymore :( If anyone knows what I'm talking about and could me out, I'd appreciate it. (EDIT: Hey, mwmythicmods sounds like a good place to look)
Also, I've always been told that the pre-made classes were junk and to always make a custom class. Is that true? I'd like to try at least one of the pre-made classes, but don't want to waste time on what's essentially a gimped character.

There are tons of face/hair mods out there, you may have used any of them... Pick and choose what you like. ;)
And as for the basic classes... well, truth be told, I've never used them in Morrowind, but I don't think they are "inherently flawed" as such. Remember that "most people" seem to want to play highly optimised characters, gaining maximum of effect from minimum of effort... I admit, my first (custom) character was a total failure, but the way in which I failed (this took about 2-3 hours to notice) gave me valuable hints on how to construct the next character. ;) I think the only "critical" skill is having one weapon skill as a Primary skill. All the rest depends on your personal taste and intentions for that character...
Remember: at least half of Morrowind is In Your Head! Roleplay! Think about who your character is, why does he/she DO any of this stuff instead of settling down and growing saltice or something... ;) It also helps to remember who your character is and what he/she was doing when you return to that character later... My own method is taking screenshots of important and interesting events, linking them to a web page and building a little illustrated story of my character's life with that, but I understand this is not something most people would do. ;)

Better Heads and Better Bodies are both mods that completely remake (ready for this?) bodies and heads. The bodies are seamless and look marvelous. Better Heads works well with Better Bodies, and it gives all the NPCs new faces and hairstyles. Should be exactly what you're looking for. Keep looking and you can find new clothes and such that work well with Better Bodies.
And yes, pre-made classes suck. Go custom!
