When I was in London I tried doing what I'd do in Finland, which is not tipping at all. It was frowned upon, and I felt like an asshole tourist. So probably a good idea to figure out what the local customs are before your trip, yeah.

15% on meals is the generally accepted minimum. $1 a drink for drinks.
I don't know the rates for porters and valets, I don't usually stay in places that have them and I generally travel light enough that I wouldn't need their help if they did.

% tipping I've always been comfortable with but $1 per drink doesn't sit right with me.
It could be because I'm an alcoholic.

It's funny because it works both in the 'Scots like to drink' but also the 'Scots are notoriously stingy' sense.

I've never got the stingy Scots thing because I've never met a stingy Scotsman. I used to spend Christmas in Dunfermline and the only thing about the Scots is they dunt like the English on principle, which is pretty prejudiced. Everything else about them seems to be awesome including good drinking skills.
In all seriousness - 15% is probably sensible because food is fairly cheap there, no?

Well things aren't exactly cheap - i have been hearing 18% to 20% is the accepted amount. I have heard $1 per drink... But also alternatively $2-$3 i don't think i could honestly afford that! Room service comes with a $3 charge on top of premium price and a 18% gratuity already in the bill - so call me a tight Scot... but i am not adding any more to that.
I had also heard $2-$3 per day for room attendants/cleaners... which i will observe , though it was also suggest $5. That would be an extra $150 on my trip!... I am sticking to $2. it is a branded standard business hotel, it is not the ritz that i am in.
I was just wanting to check i wasn't being a nob and stiffing hard working folk(though i do hate the principle, i don't understand why folk can't just charge and pay staff fairly!)
