I'm probably going to be horribly attacked with flying tomatoes for this but...
I seriously can't remember facing a Treebeast in Thief 2. At all. I didn't even know they were in that game before I heard someone mention them.
Am I just incredibly forgetful or is this enemy really obscure in the game?

You probably didn't get close enough to one to wake it out of its Ent-like slumber. You know where they are in the game, right? At the end of the mission "Trail of Blood"...one of the scariest parts of TMA. The Treebeasts make blood-curdling grunts when you start waking them up. Come to think of it - Victoria could have really used their help when she stormed Soulforge. The Treebeasts could easily have taken out Karras' robots.

They are my favorite beasties in THIEF. Not that I love them. But as protagonists they are nearly unbeatable, but they can be outsmarted.
My first encounter in the forest, was a complete surprise and utter disaster. I died a horrible <s>dead</s> death, without the slightest clue as to who or what killed me.
I knew it wasn't the apes, but that was the extent of it. It wasn't until my second or third attempt at the village that I got a clue and, although I didn't need a change of shorts, I certainly needed to learn to not be so goddamned nosy and... RUN LIKE HELL.

I don't really care for them - to me they are horribly overpowered. Frightening yes, almost to the point of annoyance. They are great for adding tension if placed correctly, but I've played tons of FMs where they are put in twos or threes near an entrance or somewhere that you have no choice but to engage them - and that isn't really what thief is about.
There are plenty of FPS games out there where I can face off against huge overpowered grunts :laff:

Antagonists would be the word I think...
I like them too. Really the only whopping big, nearly unstoppable AI in the OMs... We need more of those.

Unlike most of the "kill Garrett" critters and AI, no multi-hack slowly dwindling life shields. Just WHACK... and instant oblivion. :)
