In my opinion, ghosting doesn't require to find all the loot, just staying in the shadow, without being noticed. This requires of course that you don't leave the place in a different fashion from how you find it before, that is banners intact, both coffers and doors closed, and no unnecessary property damages. AIs could be knocked out, but just when you haven't other possibilities, and anyway without being noticed, so the guard could think to just having got an illness and fainted.

Not so keen on direct confrontation, but it might be nice to have some guards give off some sort of information if you were to shadow them for a while. Maybe a nervous glance at a loose brick every couple of patrols? That sort of thing ...
EDIT: Actually, let me elaborate on that a bit: Shadow, your idea is a bit of a rough fit in a game where the main fantasy is that you excel at staying out of sight. That being said, I think it's great that you are trying to think of ways of interacting with the guards. I do think that thief badly needs to have guards who are more then just moving obstacles on the way from A to B. But it's not at all obvious what sort of interactions you can have in a game where the core fantasy strictly involves avoiding interactions!
