I usually look at the brightness of the item I'm carrying...although I don't think you can hide in the shadows like you can with the Thief series anyway...

Actually, I think that's a bad idea. A visibility gem is in the Thief games because the game focuses on light intensity and visibility - in Deus Ex, sneaking is just an option. Just an option of many. It would be too complicated and unnescessary to add it just for an option of play, I think.

How about have it as an optional augmentation that would add something similiar to that to the GUI. Only the stealthy people would bother using up an augmentation slot for it.

One thing about sneaking that really annoyed me in DX was that leaning around a corner made you too visible. If the enemies can detect you as if you had just stepped around the corner, what's the use of the whole function?

Well, look at it from the other side - what difference does it make whether someone walks around a corner or sticks his head out? You see him anyway. It's just more convenient for the player to be able to stand behind the corner and have one key to check the corridor and get back immediately if necessary.
