So, I played the game through. Totally loved the music.
When I installed/unzipped all my game rippers/extractors, I was unpleasantly surprised to see that none worked. I have failed after succeeding in ripping Baldur's Gate 2, UT, NFS5, Rollercoaster Tycoon 2.
I was mad. And that was last December. I'm still mad and have made petty little progress on getting the music. The files can't be found on the net.
Vivendi haven't published even one piece from the game OST. All I managed to do is load the music budnle file in Cool Edit Pro. That results in the music actually playing very very faintly behind a friggin wall of noise. No noise reduction corrects that.
And I will be mad next December as well if I haven't ripped the music yet. (talk about stubborn) ;)
If you have the game, load a save from the Prancing Pony inn, walk about the rooms and listen to the music. Aah! That's why I want these wavs, mp3s, oggs, whatever the crazy designers threw in the .sdu file.
Help will be appreciated more than you could imagine!

10 years later, someone plays the game through. Has the same question as you, can't find an answer so they record the game with FRAPS, extract the audio and post it here.
