A recommendation, after you season the oxtail to u r liking put in half a bottle of sangria & a can of Coke,& yes after that hour in the pressure cooker it does come to finger lickin good status. also to accompany, my wife fries up sweet plantains & serves it on white rice. include a bottle of Cabernet & you should be good to go.

Gussss - sounds good (Coke in food is a weird thing that just works. BBQ chicken wings marinated in Coke ftw) but are you saying I should use Coke as well as fermented tofu?
Sounds like you and I might eat similar stuff (though I be prefarin akee n salt fish wi me plaantain) but fermented tofu is plenty flavour enough imho. Well, chilli complements it but Coke?
