I remember reading an article on Garriot making Akalabeth... It was really IIRC one of those things where a person gets an idea of translating the D&D genre to a game and sits down and literally maps it out just for its own sake, before he's thinking of the commercial value. The tone of the article made it sound like he was really in a bubble making stuff up as he went along to do what had to be done. I don't know about Wizardry, but I imagine it was more of a commercial venture from the start and they knew what they were going to do.
As an aside, the cool thing about reading about that era, or the era when 3D games first started, was that everything was new to everybody, so there was a lot of experimentation and discovery of stuff we take for granted now. Hard to know what people could make today that's really new. Probably a fun time to be making games then, as long as you weren't worried about making real money off of it.
