Is it considered OK to take entire folders of custom textures from other FM's as long as you have an acknowledgements text in your FM zip? How far do you have to search to try to find the original texture maker? For example, Home Sweet Home has some textures I'd like to try. I could acknowledge Lady Rowena, but it isn't clear where she found them in the first place, or made them herself??? What is the standard for using other textures, objects, sounds, etc.?

It's your choice really. As long as the source is acknowledged and can be traced I'd say it's good. No need to be too finicky with that or else you'll never see the end of it.
What you can do is do a small list of which resources you couldn't trace yourself and ask the beta-testers if they can find the source.
However I would strongly advise to check if the resources are compatible with the overall Thief feeling, custom resources can look out of place if badly used (Too much polygon, way too drab or too colored, too pixelised, techno music etc. etc.) but there shouldn't be any problem with Lady Rowena's textures
Now from experience, Lady Rowena used mostly textures from Rune, Return to Castle Wolfenstein and Clive Barker Undying. I hope that can help! ;)

I agree with Squada here. Also, if you go to Google image search and drag an image file onto it, it will upload the image and search for it and possibly return results that will help you identify the original source. But at a minimum, if you credit the FM you took it from at least then you're not saying you created it yourself and it provides a line of traceability for others.

Tangentially related, but I always start my Readme file the moment I use any custom resources, and list them in there every time I add one. Doing it on the fly saves a lot of faffing about and detective work later.
