City missions where you can enter (at least almost) every building are my favourites. Having a good and useful map adds to my enjoyment, as does several little side-plots that do not necessarily have much to do with the main plot or the player character. I like when there are several named characters in the mission, each one with their own story, motivations, etc.
When the city is 'alive', so to speak.

Exploring and citywalkings.
For the first one as example - Willow Island.
For the second - anything that has streets, "Rocksbourg", "Being Thief", "Unknown Treasure", etc...
But since this is only one game type pick, then I would've pick Exploring over citywalkings.

I'm tied between which of these 2 I should pick. I do adore vast town/city exploration missions that pack a punch in terms of atmosphere, gameplay, plot, level design & structure, etc (such as Eclipsed or Chalice of Souls). However, I also love a good Mansion FM, as well. I mean, that's pretty much what the Thief games are about, right? Plus, there are many 'gems' of that sort out there with their own unique twists on it (just look at things like Ominous Bequest or Iron Heart, for example).

I know some folks think they're overdone, but for me, a giant Victorian mansion or museum is the classic Thief experience.
I also dig well-done city / thieves' highway missions - it can make for some nice variety. Loot some poor sap's apartment, clean out the jewelry store and the bakery, snatch a few goblets from the Hammerite cathedral, etc.
Missions with novel themes (modern settings, holiday missions, etc.) are sometimes fun, as long as they aren't overly difficult item hunts.
I don't like missions which force you to sit through cutscenes, or which require you to keep up with dense narratives in order to make progress. A bit of story to lend flavor and structure is fine, but I'm more interested in gameplay than story. Anyway, much of the best storytelling is done by showing rather than telling.
I skip undead-heavy missions entirely. I'm not a ghoster - I like gradually "unlocking" the mission space by knocking out guards, disabling cameras, etc.
In terms of objectives and mechanics, it's nice when there are goals other than "steal the MacGuffin". I'm gonna steal everything that's not nailed down anyway - a steal-the-MacGuffin objective doesn't require any additional thought or effort, unless the MacGuffin is protected by some kind of puzzle.

I can't name just one mission style!
Favorites: Mansion, City, Hammerite and Mechanist (yes, you heard me right, Mechanist) and Horror and Science Fiction settings.
Least Favorite: Indiana Jones-style tombs, Pagans, Jailbreaks (don't like being without my equipment!), Romance

Love Mechs myself-it's a great excuse to get my sci-fi fandom on!;) I also like well done Hammer missions as well, not to mention the occasional Lost City type mission.
