Similar to Zontik, I sort of obssess on knocking out every humanoid AI in the level, even going out of my way to do it.
Actually though I have my own style. When I play a level, I ghost in the sense that I won't allow any living AI to be aware of my presence. If any reach a level 3 alert, I will reload. But I do knock out every living creature in the mission, without alerting any AI at all, no matter how hard that might be to accomplish (try that on the two guards outside the mill in "Seven sisters:night 3" if you think it's so easy).
I also absolutely refuse to take advantage of the hide in shadows and knock out alert AI trick. I consider it cheating.
Any spiders or undead get killed, as long as it doesn't alert any other AI in the process, otherwise I ghost those. I also vandalize everything, going as far as to slash every tapestry I see, even the hard to reach ones. Any dishes, or potted plants go flying, etc...
When I am finished with a mission, I want them all to wake up with headaches, all the loot gone, everything vandalized, all the spiders dead, the undead laid to "rest", and have no clue who did it.

A Serial Conker. Every head, given the opportunity, must feel the thwack of my blackjack before the cold embrace of dark night.
Failing which I just run past and slot an arrow through their eye if I have to, which isn't terribly becoming of Mr. Tall Dark and Shadowy, but c'est la vie, parfois.

I try to find the fastest routes for missions. While doing that, I sometimes discover odd things that may or may not be used to achieve low times. For example, did you know it's possible to mantle through the windows in Gervaisius' mansion? Or that guards can't even keep up with you while you're carrying a body? It's true!
Edit: talking about strange and unusual, does anyone know if Azal's Thief II Guide to the Strange and Unusual is still hosted with the images somewhere? Archive.org has it and it's also somewhere on TTLG but both w/o the images. There was this site that hosted it in full glory some months ago but it went down I think.
