I think this boils down to the player getting to control the pace of the game. So the "difficulty" goes up and down organically throughout the game, based on how confident the player is feeling, rather then depending on some external slider or adaptive algorithm. I think this is the best way of handling difficulty in a game.
The Sims does something similar, and when it comes to handling game difficulty, this is probably about as much of a compliment as you can hope for. :p

I find myself way more patient in Thief and Thief2 than in Splinter Cell. Don't know why. I feel more like an artist in Thief.
