I usually do not listen to music or anything else while playing Thief. One mayor exception was listening to some kind of audio drama set in some medieval world while playing the first two Rocksbourg missions, therefore I still connect them with each other.
I have not yet found any music reminding me of Thief, unless it was at least made with samples from thief, such as "Mortified", "The Haunted" and so on.

I encourage you to give Kammarheit a listen. Some of the tracks, especially from (
http://www.last.fm/music/Kammarheit/Asleep+and+Well+Hidden) Asleep and Well Hidden, sound very much like Eric Brosius' later work (Deadly Shadows).

Fields of the Nephilim sometimes reminds me of Thief. I'd never listen to music while playing, though.
