Soulforge notwithstanding, I think the first is the most difficult of the three. I voted for TG because I've only ever played it (I don't own a copy of TDP).

Most hard Thief Game personally: Thief 2
Limited blackjacks and forced ghostings in some levels.
Most hard OM tecnically: Sabotage at Soulforge (T2)
Most hard OM emotionally: The Craddle (T3)

It is hard to say. Thief1 was, after all, novel, and I played it when I didn't have much practice with FPS games yet (I was into strategy and RPGs). So while it seemed cutthroat and entirely merciless, that could be my inexperience speaking.

Thief 2 was the most difficult. Several levels were tougher than anything in Thief 1 or Thief 3.

TDS.
Because I have problem with a blackjack (the side knockouts, to blackjack someone in a chair, etc). This blackjacking thing is one of the huge disappointments to me in TDS.

The most difficult is of course TDS, very limited amount of arrows and items and no sword, Garrett is quite vulnerable, he mayn't even swim in the water, what was natural for prequels. Very inconvenient control of the player, hard to mantle.

Heh, not for me. I had no trouble at all keeping my various arrows and items maxed out in TDS. Of course they do limit the number you can carry though... But I don't miss the sword one bit when I play it. I actually find it the easiest for toying with the AI.

Thief: Deadly Shadows (PC). Not because the missions were difficult (they weren't), but because the controls are so damn clunky and awkward.
