Firstly, there was the time that I used a Scramble Grenade on one of the big bots. I ran from behind the corner, threw it, and ran back. I then heard him shooting. I started chuckling evilly, wondering how many troopers he'd take out. After a bit, I went round the corner and found him still shooting; and surrounded by the dead bodies of dozens of seagulls! That was annoying at the time but funny when I saw how many he'd taken out :)
SPOILERS
My other best moment is in UNATCO, (third time you go in there?) when Walton Simons has told Manderly to fire Paul. He walked down to Level 3 as usual and I decided to test how invulnerabl he was :D I fired a LAW at him and he, predictably, survived. So I threw a few Gas and EMP Grenades at him as well as a few LAMs then legged it round the corner. He followed me with his Plasma Gun out and started shooting as I ran around madly. Simons managed to hit a trooper sitting in the room - who started attacking Simons back! Other troopers joined in from other rooms until there was the whole of UNATCO running around! There were 6 troopers and Manderly(!) all invulnerable and all fighting Walton Simons! Simons had his Plasma Gun, the troopers had Assault Rifles and Manderly was shooting his pistol whilst all suited and booted :)
This went on for 10 minutes with me laughing like a maniac and throwing Grenades in there every so often :) Until I realised that the troopers weren't shooting any more. Instead, they all had their knives out and were all surrounding Simons and stabbing him! :D
The only disappointment was that Shannon didn't get involved :)

Re: the UNATCO-attacks-Simons post -
There is a variation of this where all of UNATCO attacks a cleaner bot. I've been unable to get it to happen because to start one of these fights, it's critical to get a trooper hit (as happened with Simons hitting the trooper in your scenario above). That is, shooting (or stepping on) the cleaner bot isn't enough, it must also bump into a trooper while in "hostile" mode. Then the mayhem occurs, with everyone pulling out knives when they run out of ammo. The bot, like everyone else, is invulnerable :D
Someone else here mentioned leaving a "message" for Maggie Chow. I *always* leave a message for Walton Simons - I never need what's in his safe (I won't tell, no spoilers here) by the time I get to the Naval Base, and I badly wanted to leave a note in his safe saying "Guess who?" or "Denton was here" but since the game isn't *that* realistic, I always blow up his office.
Denton was here.

Watching my friend chasing seagulls and pigeons with a flamethrower shrieking "BURN, RATS OF THE SKY! BURN IN HELL!" over and over was pretty funny.

One word: Sniping.

This one had me chuckling -
Just arrived in Hong Kong, still in the MJ12 facility, I´d cleaned out the place with the exception of the roof.
So I went up the ladder, and shot one of the guards up there. When this didn´t kill him (I´d used my 10mm pistol), I raced down the ladder to the hangar again, and waited for the berserking guard to calm down again.
Which was when a guard suddenly plummeted down the ladder, hit the floor, and was killed.
This made the enemy AI seem so much more real; I can just imagine the guard, furious and in pain after being sniped at from cover, racing towards the place where his attacker must be, circling the perimeter of the stairwell to get a clear shot, and then suddenly going over the edge...
The strangest One Shot = One Kill I´ve seen so far.

OK, I have now decided that using the flamethrower on anybody is about the most fun you can have... watching them running around screaming before they finally fall to the floor as a charred corpse, lighting random objects on fire as they run around.... yeah, that's the stuff dreams are made of.
Hmm... there's probably something less evil but I can't think of it right now.

Interesting thing i found about burned people...after they burn up.....a single round from the pistol will cause them to explode into bloody chunks

He he... reading all this makes me want to play through the game again.
Personaly, I didn't try all that much wierd stuff, just: Hunting birds and rats, droping things from high places, drinking all the alcohol I could get my hands on, stacking trash-cans on top of each other and trying to climb them, jumping Matrix-style between rooftops using the speed-aug and attempting to stand on top of security-bots to go along for the ride.

I once took 5 zyme vials @ once. My screen was twisting around so much I fell at of my chair trying to get a good view. It took 7 minutes to clear up. :p
Another hobby of mine is to get everyone fighting each other in hong kong. police vs. gangstas with me using the flame thrower on the helpless citizens.
