Um, the Hammers are practitioners of magic, and their priests cast conjured projectiles, too. Holy Water, healing fonts, the Lunar Pool, the Builder's Blessing, the Builder's Chalice, The Eye, the Talisman(s), the Builder's Chisel.
The Hand Brotherhood are not natives of The City, and come from "the east". They practice elemental magic, which is not uncommon. It is the way they do it that is unique.
Magic is common to all three major factions, plus the Hand Mages.

TDP best, by far. In TDP there were many missions without obvious shared goal (Cragscleft, Bonehoard, Ramirez's...), but when the quest for the Eye begun it took the Cathedral, the Talismans, etc., and blended them nicely to the big picture.
In TMA Garrett's only goal seems to be harassing the Mechanists. And here's another problem: in TDP the Hammerites were the game's elite soldiers, and were rightly to be feared. TMA's army of Mechanists in "an overkill" against one petty thief. Well, when the game brings 'em all on and there's little to do about it, you'll knock out and kill more of them than you can count (when not ghosting, that is...).
Also, the characters (and their design) of TDP were superior compared to other Thief-games. (Hell, even Viktoria made better appearance in TDP than TMA...):
"Viktoria and I are..."
"...Old associates."
"Yes."
Can't find this kind of dialogue anywhere else in the Thief-series (or anywhere else). Karras had little interactions with others ('cept the late Sheriff), and Gamall had, well, none...
TDP's Dynamic Duo almost stole Garrett's spotlight.
Many is more powerful than one.

It's not really thread-related, but since you quote it:

Especially this part of the dialog seems so incredibly obvious with respect to Constantine's true intentions (in both German and English, I've just checked via YouTube) that it kind of spoiled the whole following plot for me.

Well, the two were like classical James Bond-villains, and it was easy to guess that the thing will backfire at Garrett's face.
This is probably widely known, but:
What I didn't guess was the true nature of Constantine. I thought him as some fanatic/henchman of the Trickster's cult. When the Trickster-card was played I was totally wordless.

I voted for TDP. But, I think of the trilogy as one plot. TDP dropped hints about things that materialized in TMA, which likewise hinted at more to come. Granted, DS did sorta splay all the factions out and make a circus of it, a little, but it was still a franchise grade plot.
I hate having to choose, but I guess if I hadn't reacted to TDP so strongly I would not have acquired TMA nor DS...or duplicate copies of each game.
