Very good point to first consider expert objectives and then offer easier alternatives. At least if nothing else, to remind us to focus on a goal to become expert eventually.
I admit starting out with normal difficulty can be helpful when first playing thief to learn what it was all about, how to use the keyboard, and explore the impressive level design more easily. Later I was comfortable enough to start with expert. I no longer felt it fair to play cautiously and learn the level design and how AI responded before replaying on expert.
