Here's a possible explanation.
Blades are designed for mostly soft and vulnerable (often fleshy) targets, but also those that are sharply defined and have visible points of weaknesses (the joints on animals and humans for example).
The designs of the Children of Karras are, more or less, simpler in nature. The metallic carapaces smooth and the joints are comparatively streamlined, offering no obvious point of weakness to sharp-force attacks.
The point is that it makes more sense to try to damage blunted surfaces with blunt weapons.
My brother suggested this to me , by the way, so I have him to thank for this hypothesis.

You can get in through some bugs/exploits but you'll fail the objectives (don't let him know what you're up to) immediately. You might, however, be able to disable the objective in Dromed.

This reminds me of my old notion of getting someone to mod the gamesys (or whatever is required) to essentially turn Thief into a "shoot 'em up" just for fun. Seeing speed runs of other games has helped nurture that desire (though we can still obviously do speed runs in Thief; they just won't be as fast-paced).
