My only experience with Atlus' games was the SMT series and spinoffs, and none of them(with the exception of Persona 3) required any leveling whatsoever.

Yes, but more in a "figure out the boss's weaknesses and patterns and pray to god he doesn't use that insta-kill attack" way and less in a "grind for 20 levels before every single boss fight" way. That said, it CAN get extremely frustrating sometimes.

Thanks for the link, I just finished that game. I haven't really paid any attention to surgical simulations before, but that was surprisingly interesting so I might just take a look at some of the ones listed here.

Your safest bet is with SMT3, dethtoll. There's almost no plot to speak of after the first hour or so, so there's no stupid JRPG shit you might hate(and even what's there is not exactly standard JRPG), and the gameplay is some of the best the genre has to offer(again, some of the bosses are an exercise in frustration, but they almost all have a save point right next to them). Try reading a little about the game and see if you like it. The problem with it is it's very rare.
Digital devil saga is my personal favorite of the bunch, but you might want to avoid it due to the more standard JRPG stuff.
