Well, it's a difficult question and the answers can differ from person to person, but I would suggest the following missions, based on their quality or some other special preferences.
I hope you wont find the additional information in brackets too "spoiling", but I tried to highlight some of the basic things about each mission where I could.
- Stowaway (old classic, daylight mission, really simple but unique)
- Eastwater Bank (genius use of small terrain)
- The Seven Sisters (best mission set of all time for me)
- Turn of the tide (thieves, pubs, fog and rain makes it one of the best set and thiefiest missions of all time)
- Broken Triad (see it for yourself)
- Rebellion of the Builder 1 and Rebellion of the Builder 2 (tough and really exciting campaigns)
- A night in Rocksbourg 3: Ink and Dust (if you want something really dark)
- Omnious Bequest (one of the best mansion missions of all time)
- Tales from the Cleft: Vandal (see it for yourself)
- Deceptive Perception 2: Phantasmagoria (WARNING: it's really dark and twisted)
- Stumdrang Peak (campaign in a tropical setting)
- Lost in the far edges (unique setting, nice gameplay, see it for yourself)
- Godbreaker (one of the most ambitious campaigns of all time)
- and of course: Death's Cold Embrace (a new but classic one, a campaign set in wintertime).
- Double or quits (gritty and nice atmosphere, true Thief experience)

How about mentioning your play style and the types of levels you enjoy then include a list of fan missions that you enjoyed. This way someone can find the list they would enjoy the most more easily.
